Kelp: Nutrition, Fucoxanthin and the Iodine Question
Kelp is food across most of the Pacific rim and a supplement ingredient nearly everywhere else. It is also the reason this guide leads with a thyroid warning rather than a benefits list: no other common food comes close to it for iodine.

What kelp is
Kelp is the common name for large brown seaweeds in the order Laminariales. Laminaria japonica — now formally Saccharina japonica — is the species farmed at enormous scale in China, Japan and Korea, and the one usually named on supplement labels. Dried, it is kombu, the backbone of Japanese dashi stock.
Kelps are not plants. They are brown algae, in a completely separate branch of life from land plants, which is why their chemistry is unfamiliar: alginates instead of cellulose pectin, fucoxanthin instead of the usual carotenoid mix, and a mineral profile drawn directly from seawater.
Kelp forests are also among the most productive ecosystems on the planet, and farmed kelp is one of the few forms of agriculture that requires no fresh water, no fertiliser and no land.
Iodine — read this part first
Kelp is the most concentrated dietary iodine source that exists
Iodine content varies enormously between species, harvest site and season — by more than a hundredfold across samples in published surveys. A single gram of dried kelp can contain many times an adult’s recommended daily iodine intake, and cases of thyroid dysfunction after kelp supplementation appear in the medical literature.
Both too little and too much iodine cause thyroid problems, which is what makes this genuinely tricky rather than simply a matter of “more is better”. Excess intake can trigger either hypothyroidism or hyperthyroidism depending on the person, and those with existing thyroid conditions or nodules are at higher risk.
Practical points:
- Existing thyroid condition of any kind? Do not take kelp supplements without talking to your doctor. That includes Hashimoto’s, Graves’, nodules, and anyone on levothyroxine.
- On thyroid medication? Iodine intake affects dosing. This is a conversation with the prescriber, not something to adjust yourself.
- Pregnancy and breastfeeding. Iodine requirements rise, but excess is harmful to the developing thyroid. Use a prenatal supplement with a measured iodine dose, not seaweed.
- Check whether the label states iodine content. Many do not. A kelp product that does not quantify its iodine is asking you to take an unmeasured dose of the one nutrient that matters most in it.
Health Canada and other agencies publish tolerable upper intake levels for iodine; they are worth knowing if you are considering any seaweed product.
Nutritional profile beyond iodine
Set the iodine question aside and kelp is a genuinely interesting food. Dried kelp contains:

OptiPlax lists both kelp powder and a kelp extract standardised to 10% fucoxanthin, which suggests the fucoxanthin fraction is the intended contribution rather than the mineral content.
Fucoxanthin research
Fucoxanthin is the carotenoid that gives brown algae their colour, masking the chlorophyll underneath. It has attracted a substantial laboratory literature, mostly around metabolic endpoints — effects on adipose tissue and on markers of glucose handling in cell and rodent models.
Human trials are far scarcer. A small number of studies have tested fucoxanthin-containing preparations, generally in combination with other ingredients, which makes attributing any effect to fucoxanthin itself difficult. Reviewers describe the human evidence as preliminary.
It is also worth noting that most fucoxanthin research concerns metabolism rather than vision. Its presence in an eye formula reflects the marine-algae theme of the blend rather than eye-specific research.
Other safety considerations
- Heavy metals. Seaweeds concentrate what is in the water, including arsenic, cadmium and lead. Inorganic arsenic in hijiki in particular has prompted advisories in several countries. Third-party testing matters here more than for most botanicals.
- Anticoagulants. Some seaweed polysaccharides have been studied for effects on coagulation. Check with a pharmacist if you take blood thinners.
- Blood pressure medication. Kelp is high in sodium and potassium; relevant if you are managing either.
- Frequency matters more than a single dose. Occasional kombu in a stock is a very different exposure from a daily capsule taken for months.
